Local Ingredients Freshly Prepared
At the Twisp Terrace Lodge, we strive to source our menus locally and organically, and also to prepare meals from absolutely fresh ingredients. Whenever possible, we use fruit and vegetables from our Ranch orchards and gardens, or from the orchards and gardens of our neighbors. Consequently, our menu changes from day to day, and seasonally, based on availability of foodstuffs.
Ingredients that we obtain fresh in season from our Ranch or intensely locally include: lettuce of all kinds, spinach, kale, fennel, shishito peppers, garlic, bok choy, onions, milk, butter, cream, eggs, goat cheese, turnips, parsnips, celery, carrots, bell peppers, spicy peppers, dill, cucumbers, fifty varieties of apples (15 varieties from the Ranch alone), eating cherries, pie cherries, grapes, peaches, nectarines, melons of all kinds, squash of all kinds, plums, apricots, potatoes, many varieties of pears, farro, emmer, raspberries, strawberries, cilantro, parsley, rosemary, sage, and other herbs, mushrooms of many varieties, trout, sometimes lamb, pork, bacon, chicken (but not our Ranch chickens!), beef (ditto!), alfalfa-fed locally harvested venison (er. . . .), cider, both alcoholic and the juicebox kind, wine, honey, and much more. Our baked goods are made with organic flour sustainably grown and milled in Eastern Washington. It is fun and tasty to cook with local ingredients!
